Beetroot iguru/ Beetroot stir fry
1 Medium sized Beetroot chopped into bite size pieces
1 Onion finely chopped
1 tsp Coriander powder
1 tsp Cumin powder
1/2 tsp Garam masala
1 tsp Mustard seeds
1 tsp Cumin seeds
1 tbsp Ginger garlic paste
1 pinch Asafoetida
Few curry leaves
4-5 Dried Red chillies
5-6 Green chillies
1 tbsp Oil
Grated coconut (optional)
1. Pressure cook the beetroot until completely done.
2. In a sauce pan heat oil and splutter cumin and mustard seeds. Add curry leaves, dried red chillies,green chillies and asafoetida.
3. Add the chopped onions and saute till they turn brown. Now add ginger garlic paste,cumin powder,salt and coriander powder saute for another 5 minutes.
You may add grated coconut at this stage if you desire.
4. Add the cooked beetroot and saute for another 5-7 minutes. Sprinkle garam masala.
Remove from flame.
Serve hot with steamed rice or chapati.
