Brinjal fry (vankaya iguru)


INGREDIENTS

4-5 Medium sized purple brinjal cut into quarters
1 pinch Turmeric powder
1/2 a pinch Asafoedita(Hing)
1 tbsp Oil
4-5 Fresh red chillies or green chillies
8-10 Curry leaves
1/2 tsp Mustard seeds
Salt to taste

Dry roast and grind the following into coarse powder:

1 tsp Cumin seeds
1 tsp Coriander seeds
1 tsp Chana dal
1 tsp Urad dal
2-3 Dried red chillies
1 tsp Peanuts
1/4th inch Cinnamon stick
4-5 Fenugreek seeds

PROCEDURE

1. Heat oil in a thick bottomed vessel splutter mustard seeds add curry leaves and chillies followed by hing.

2. Now add brinjal stir for 2 minutes add turmeric powder and salt.
Allow it to cook completely don't forget to stir continuously to avoid burning.

3. Once the brinjal is cooked completely add the dry roasted powder stir for 2 minutes remove from flame.

Serve with steamed rice.
